12 oz fresh raspberries (or 1 (12 oz) bag of frozen raspberries, thawed)
1/4 cup granulated sugar
1 cup lemon juice (from about 6 medium lemons) combined with 3/4 cup of sugar
OR 1 (12 oz) can frozen lemonade concentrate, thawed in the fridge
2 Liter bottle of club soda, chilled
Fresh ice to serve
Fresh raspberries and slices of lemon for garnish (optional)
Combine the cup of lemon juice with ¾ cup of sugar. Dissolve completely. In a blender, puree together the fresh raspberries with the ¼ cup of sugar. Now add the lemon mixture to the blender and mix thoroughly.
OR IF USING FROZEN LEMONADE & FROZEN RASPBERRIES
In a blender, puree together the thawed lemonade can with 1/4 cup sugar and 1 bag of thawed raspberries.
If you don’t want the seeds to be present in your lemonade, you can strain the syrup through a fine strainer, pressing on the seeds to get as much syrup through as possible. This part takes a few minutes. Discard leftover seeds.
Just before serving, combine the raspberry lemonade mixture with the two liters of club soda (slowly because it fizzes like crazy!) in a pitcher or punchbowl and toss in fresh raspberries and lemon slices.
Note: If you want to make individual cups, add ice to a tall glass then top with 1/3 cup of raspberry syrup and gently/slowly pour in 1 cup of club soda.
